■Beluga :The most expensive caviar comes from the Beluga Sturgeon, native to the Caspian Sea. Generally, the lighter the color of Beluga caviar the older the fish is. The word caviar comes from the Persian word “Khag-avar,” meaning “the roe-generator.” In Medieval Russia, caviar was a peasant food, but by the time Shakespeare wrote the famous, “twas caviary to the general,” caviar had gained its association with connoisseurship and luxury. An important fact about caviar is that the older the fish, the more elegant and exquisite is the flavor. This is the worlds most expensive caviar, in orange color.

■The oscetra, is less rare than the beluga, one of the most prized and expensive types of caviar available today (eclipsed in price only by Beluga caviar), comes from the Ossetra sturgeon Ossetra caviar ranges from warm brown to green-gray in color, Ossetra caviar is said to have a distinct flavor and so is prized as an elite caviar. Many caviar gourmands prefers the firm bead, texture, and nutty, rich flavor of Ossetra over all others, even Beluga.

■ Sevruga caviar: This caviar comes from the Sevruga fish, the small and trim Sturgeon. Sevruga caviar has distinguished smooth, buttery flavor. Its fine grains are of a slate-gray to black color. Semi-preserved caviar is pasteurized to have a longer shelf life than other caviars. Flavor-wise, it is just slightly saltier.

■ Red alaskan caviar: Red caviar typically refers to the roe of the salmon, so called due to its red-orange hue. Red caviar is particularly popular in Europe and North America, and considerably less expensive than black caviar. Black caviar purists tend to dismiss red caviar as overwhelmingly salty or fishy. In fact, red caviar generally contains less salt than black.
Alaskan red caviar is deemed a much healthier and nutritious alternative when compared to other types of salmon caviar.

■Russian Sterlet Caviar The sterlet is a common Eurasian species of sturgeon, one of the smaller species of sturgeon.
Sterlet caviar having a small to medium in grain size, this unique Caviar has an intense brine finish distinct to Sevruga Caviar. Sterlet Sturgeon produces Caviar rather similar to Sevruga in look and flavor, but has a slightly more regal finish.
