Some people say the carp aint that good eating but unless they've ever smoked one slowly they'd have no idear. I happen to like carp when cooked right and with some cajun seasonings WOOOO DOGGGIE. Thats good eating right there. I took the insides out and mounted the rest cause this one was the best I ever had. I hope you'll find a place for it amongst your trophies too.
